Want to catch winter trout/salmon in upstate NY!?

My cousin and i are avid fisherman, but the trout species always get the better of us. Is there a place in upstate NY(we're in rochester) Where we can catch trout/salmon/steelhead out of a scenic river? we have no boat but plenty of tackle. A bit of a hike is no problem. Looking for specific spots. Not just "salmon river" all relevant info appreciated.
