What does is mean for a horse to be gaited?

Im getting me new horse on sunday and the owner said his Canter and Gallop were gaited. What does that mean? My older horse is not gaited that I know of and never heard of it in the 7 years I have owned him. My new horse is an american mustang if that helps at all.
